IS THE DOUGH REALLY SAFE TO EAT UNBAKED?
We use pasteurized egg whites and heat treated flour to kill any potential bacteria or harmful pathogens- to make it safer to consume raw. Of course, with any raw food, consume at your own risk! If you are pregnant, please check with your doctor about consuming any food raw.
DOES YOUR COOKIE DOUGH CONTAIN EGGS?
Yes, our dough contains pasteurized egg whites which reduces the chance of salmonella or other food borne illnesses.
WHAT TYPE OF FLOUR DO YOU USE? IT IS RAW TOO?
To ensure our flour is the safest on the market to eat raw, we use a special heat-treated, ready-to-eat flour. That means there is little chance for food-borne illness, reducing any fears about eating our raw flour products.
DOES THE DOUGH TRAVEL WELL?
It depends. Our dough can be left out at room temperature for 3 hours. If you are traveling, we recommend freezing it ahead of time, wrapping it in foil and sticking it in a cooler or freezer bag when in transit. For your convenience, you may purchase ice packs and insulated bags at our shop. If you are flying, we recommend freezing the dough ahead of time, and check your dough in your bags, where they go underneath the plane. It is cooler in the belly of the plane, and the dough is not subject to TSA screening. You can also order our dough online and ship it home.
HOW DO I STORE MY DOUGH? AND HOW LONG WILL IT LAST?
Our cookie dough must be stored in the refrigerator or freezer because it contains perishable ingredients, like eggs and butter. Our ingredients do not have any additives or preservatives, so if properly refrigerated, it should last up to three weeks, and if frozen up to three months. But who can keep it around that long?!
Also, our dough is good at room temperature NO MORE than 3 hours. If out longer than that, toss it in the trash. It is no longer safe to eat.
IF I MAKE COOKIES OUT OF AN 8 oz CONTAINER, APPROXIMATELY HOW MANY COOKIES WILL I GET?
If you have any leftovers because you’ve got amazing self-control, you can bake most of our dough into cookies. While we don’t recommend it (because the dough does not have any yolk emulsifiers, the cookies will tend to be flatter).
If you want to, preheat your oven to 325 degrees and on a baking sheet lined with parchment paper, bake the cookies for 10-12 minutes or until your desired “doneness” is achieved. Depending on your scoop size, usually our 8 oz container will bake about 5-6 small cookies.
DO YOU OFFER ANY COOKIES ALREADY BAKED? WHAT ABOUT COOKIE CAKES and those amazing Dough cakes?
YES! We sell select flavors of our doughs into baked cookies, and custom cookie cakes and cookie dough cakes. We know these will be an instant hit at any event, and makes a great gift too! Our 9” dough cakes feed about 12 people, 6 inch feeds 6-8. We require a week’s notice for custom cakes, and you may contact us at firstname.lastname@example.org or call and speak with our Head Baker.
